Matthew Roulston
Manager & Sommelier

Matthew Roulston started working in the restaurant business over 10 years ago. He honed his skills in restaurants on Bay Street, working for the highly regarded SirCorp while attending the Hospitality and Tourism Management School at Ryerson University. From that experience, he realized that he wanted to go further and work in Toronto’s fine dining scene, which prompted a move to Splendido, widely seen as one of Toronto’s top restaurants.

Over the past 3 years, Matthew has been an integral part of the Splendido team. As a senior member of the serving staff, he helped train and mold new employees, conduct wine and service seminars, and contribute to the culture of the Splendido environment. Matthew is an avid wine afficionado, and has earned the title of Sommelier from the Canadian Association of Professional Sommeliers.

Matthew has embraced his new role as manager at Splendido with vigor. Working with Carlo, Victor, and Rick over a long period of time has resulted in a cohesive unit being formed that is committed to pushing a new vision forward for Splendido’s next chapter.

When not at work, Matthew can be found dining out, cooking at home, or attending wine events around the city. His travel plans often incorporate visiting wine regions (Bordeaux, Napa Valley) as he enjoys learning first hand. He is a passionate wine collector who is very keen on further developing his wine cellar, and keeping up with the great new wines coming to Canada from all over the world. Matthew’s favorite thing to do is enjoy a great bottle of wine with good food, family, and friends.
