Maurizio Verga
Sous Chef

A native of Bergamo, in Northern Italy, Maurizio began training as a cook at the tender age of fourteen. He attended the San Pellegrino Culinary Institute, where he gained invaluable experience early on in his career, working as an apprentice at the Antico Albergo al Ponte di Briolo, one of the best restaurants in Bergamo. There, Maurizio had the experience that would shape his career and developed a true appreciation for well-executed cooking.

After completing his studies in Italy, Maurizio moved to London and worked at several different fine dining restaurants. The move to London expanded his outlook and opened his mind to a variety of different cooking styles, from British fine dining at the four-star Durrant’s Hotel, to Japanese-Peruvian fusion at Nobu Hyde Park corner. In between, Maurizio passed through the classic French bistro style and a modern Italian fine dining restaurant at Shumi.

In 2006, Maurizio was on the move again, this time to Canada. In May 2007, Maurizio began working at Splendido, bringing his unique blend of traditional training and international experience to the team.
